World’s Best Peanut Sauce (and you can make it too) !

I’ve long been searching for that special peanut sauce recipe. Most recipes call for a lot of peanut butter and many times mine ended up tasting more like a PB&J rather than a taste of Thailand. I have finally found that special recipe! It’s a slight variation on the amazing Chloe Coscarelli’s peanut noodle sauce recipe. The other part I love? It’s vegetarian and extremely east to make!

All you need is….

1 cup coconut milk

1/3 cup water

1/2 cup peanut butter (smooth)

1/4 cup maple syrup (I like to use maple flavored agave syrup to save money)

1/4 cup soy or sushi sauce (I like sushi sauce)

2 tablespoons lime juice

1-2 cloves garlic (minced)

Combine coconut milk, water, maple syrup, soy sauce, PB, and garlic in a medium saucepan. Cook over medium heat and whisk frequently until sauce is nice and thick. Remove from heat and add lime juice.

Pour on noodles or rice and enjoy!

Restaurant Week

I’ve been so busy I’ve been neglecting my poor blog. One of my recent highlights was eating at Seastar with my husband for Restaurant Week. Everything was amazing but the dessert was really special. Pictured is the Passion Fruit Panna Cotta. So many flavors and textures, probably one of the best desserts ever.
